Let the little chefs in your house cook dinner tonight. This recipe is so fast and easy. They will be so proud that they made dinner!
We have all tried the mouth-watering dishes on Pinterest but sometimes they just don’t end up like we expected. I may or may not have lugged a full-size crockpot to work, along with all of the ingredients, and made crockpot brownies for my friends that ended up being inedible. (Embarrassing fail!) Well, today I tried a pizza substitute and was surprisingly happy with the result. This was definitely a Pinterest WIN! (Credit to https://damndelicious.net/2014/06/04/zucchini-pizza-bites/ for the inspiration).
We all love pizza but we shouldn’t eat pizza because there are sooo many carbs in the crust, right? No worries because now there is cauliflower pizza crust that is supposed to be better except when you you read the label, you see there are over 25 grams of carbs in most of the crust available in the supermarket!!! How is that better for me? The crispy cheese in these little bites taste like a crust and you won’t miss your traditional pizza! Really!
There are literally four ingredients (that aren’t necessarily healthy but are better than eating traditional pizza with all of that dough). MyFitnessPal shows one full zucchini with all of these toppings is 345 calories as opposed to ONE SLICE of Domino’s pepperoni pizza at 380 calories. You can eat a whole zucchini, approximately 15 bites, or you can eat one slice of pizza for almost the same calories. And who can eat one slice of pizza? (It takes lots of time in the gym to burn off all of those pizza calories plus I feel gross the next day!)
The ingredients in this dish are one zucchini per person, jar pizza sauce, mini pepperoni slices and shredded cheese. It took 10 minutes to get everything ready and 10 minutes to cook.
I lined a cookie sheet with aluminum foil for easy clean up then placed the zucchini slices in rows. (I will probably use parchment paper next time because the cheese stuck to the aluminum foil a little bit.) Next, on each zucchini slice, I added freshly ground pepper, pizza sauce, mini pepperoni slices and then topped each with shredded cheese. (I didn’t add salt because there was enough salt in the pepperoni slices.) Then I baked the bites at 400 degrees for 10 minutes or until cheese was crispy and zucchini tender. Let them sit for a few minutes so you don’t burn your mouth!
These zucchini pizza bites are AMAZINGLY DELICIOUS and we can’t get enough of them. You will not believe how much this taste like pizza! OMG!
- Freshly ground pepper
- Zucchini – one per person
- Pizza sauce
- Mini pepperoni pieces
- Shredded cheddar cheese
- Line a large pan with parchment paper or aluminum foil.
- Cut zucchini into 1/4″ rounds and season with freshly ground pepper.
- Top each zucchini round with a little pizza sauce, three mini pepperoni pieces and shredded cheese.
- Bake at 400 degrees for 10 minutes or until cheese is crispy.
- Allow to rest until the cheese is set and slightly cooled.
